
Ingredients: smoked dried catfish (rehydrated & cleaned), 1 large onion, 2 rounded tomatoes, 2 red bell peppers, 2 scotch bonnets (to taste), ¼ cup palm oil (or neutral oil), 2 tsp ground catfish powder, 1 tsp thyme, 1 stock cube, salt, vegetable of choice for garnishing.
Steps:

Blend/ crush tomatoes, peppers, half the onion. Simmer to reduce by half.

Heat oil; sauté remaining sliced onion 2–3 min.

Stir in pepper–tomato base, thyme, fish powder, stock cube, salt; cook 10–12 min.

Nestle in rehydrated smoked catfish; simmer gently 8–10 min, then garnish with vegetable of choice.
Serve with: boiled rice/ fried plantains/ yam
