Smoked Catfish Sauce
Ingredients: smoked dried catfish (rehydrated & cleaned), 1 large onion, 2 rounded tomatoes, 2 red bell peppers, 2 scotch bonnets (to taste), ¼ cup palm oil (or neutral oil), 2 tsp ground catfish powder, 1 tsp thyme, 1 stock cube, salt, vegetable of choice for garnishing.Steps: Blend/ crush tomatoes, peppers, half the onion. Simmer to reduce by half. Heat oil; sauté remaining sliced onion 2–3 min. Stir in pepper–tomato base, thyme, fish powder, stock cube, salt; cook 10–12 min. Dried Catfish Pepper Soup (Point & Kill–style, smoky)
Ingredients: smoked dried catfish (1–2, rehydrated), 6 cups water/stock, 1 small onion, 2 cloves garlic, pepper-soup spice blend (1½ tbsp), 1 scotch bonnet, scent leaves or basil, salt.Steps: Bring stock, sliced onion, garlic, pepper-soup spice to a boil.
